I love the glorious green colour of them - always looks great (except when they discolour). I love my guacamole with garlic and am less of an onion person but I do like the idea of washing it to reduce the bite. I don't remember the first time I had guac, but the first time I bought an avocado to eat at home I didn't realize it needed to be ripe.
