Could this seriously be any easier? I wonder how it would turn out with apple juice instead of orange...

Cakespy,
I used dried (ie, presweetened)cranberries, but I bet this would be just fine with only the OJ. I drink unsweetened cranberry juice and it's tart, but still really pleasant (though I've never eaten the berries on their own).

VeggieGirl,
I was surprised at how much I liked this (since I really DON'T like cranberry sauce). Great on muffins!

Lisa,
That's actually how I ate the croquettes when I had them for breakfast--it was delicious (and thanks again for the fabulous recipe!)

Susan,
I bet it would be great on baked brie! You could always use frozen berries, I guess, or just go with the dried, like I did.

Holler,
That's a philosophy I need to embrace: "simple is good"!! In this case, totally :) .

CCV,
Thanks! And sorry to make you hungry--go forth and bake (and blog about it!), I say ;) .

Johanna,
I find cranberry sauce very sweet, very gel-like (almost like a cranberry jello, somehow). This came out smooth and spreadable, like a jam, and I think the OJ provided a nice citrus tang to it that I've never tasted in cranberry sauce. And this would be DIVINE on nut roast!!

this looks so good and so simple! I think I will need to try this with a nut roast at some time. Is it different to cranberry sauce because cranberry sauce is full of spices or is there another reason (can you see I am not really that familiar with cranberry sauce)?

I'm intrigued. I've never made cranberry anything w/out sugar. This would be delicious on a wheel of brie. Too bad I will have to wait. I can *never* find fresh berries outside of the holiday season.

Your suggestion of serving these delightful preserves with the quinoa-oatmeal croquettes is a good one! Yum.
