[...] ReBar Rice Pudding from the ReBar cookbook: I make this at least once a month, so I’ll just put it in here. Rebar is a vegetarian restaurant in my hometown, and I have a copy of their fabulous book. This rice pudding is everything you’ve ever wanted from rice pudding: lots of nice spice, not to sweet but just sweet enough, creamy from coconut and dairy-free! I also have an almost endless supply of brown basmati rice because I bought a 20kg bag from the local organic store on sale. Last year. Still eating it. [...]

Meeta,

Thanks so much, and welcome! I enjoyed coming up with something new and really do love this pudding. At least we can say it's a healthy craving :) .

Romina,

I hope the pudding helps combat some of that constant cold! I think this is a good recipe for a re-introduction--much better than what we had as kids!

I could not have explained my hatred of winter any better. It's cold here all the time. Quite literally. And it's just not fun, especially since I have a naturally low body temperature.

Comfort foods seem to be the best medicine for winter woes, and that rice pudding looks like it needs some devouring. Yum! Thanks for the recipe. It's been so long since I've had rice pudding, and I restocked on cardamom today. =)
